How to Make Boza at Home?
You can also make boza, a beverage that warms you up on cold winter days, at home. However, you should not forget that you have to be very meticulous while preparing it and that fresh boza should be consumed within 5 days.
Materials
- 4 cups bulgur
- ½ (half) glass of rice
- 3 tablespoons of sugar + 1.5 cups of sugar (to be used last)
- 1 teaspoon of dry yeast or 1 cup of old boza already found

Fabrication
First of all, all kitchen utensils to be used in making boza should be washed and cleaned. Because dirty equipment will cause the growth of harmful bacteria along with beneficial bacteria during the fermentation of boza.
- Boil the bulgur and rice in a saucepan with plenty of water. Then strain the boiling mixture and put the bulgur and rice in a separate bowl.
- Let this mixture rest for 1-2 hours in a dark environment without covering it.
- While the mixture is resting, in a separate bowl, mix the dry yeast or the old boza you used with 3 tablespoons of sugar and half a glass of water.
- Add the sugary mixture to the container with rice and bulgur, cover the container and let it rest for 1 day in a dark and slightly warmer environment (30 C) than room temperature.
- Turn the mixture on and off again, stirring occasionally.
- After 1 day, add 1.5 cups of sugar to the mixture, mix well and adjust the water and sugar ratio according to your taste.
- If you wish, you can not add this sugar in the last stage at all, or you can increase or decrease its amount.
After cooling your boza in the refrigerator, it is ready to serve. You can serve with cinnamon or yellow roasted chickpeas, if desired.
